Tuna Poke w/Nori Crisps

ingredients
all
4 t dried wakame
2 t dried hijiki
1 1/2 lbs raw sashimi-grade tuna
cut into ½ inch cubes
1 cup edamame
3 each green onion
thinly sliced
2 t toasted white or black sesame seeds
or a mix
1/4 cup soy sauce
3 T toasted sesame oil
3 t honey
Salt and pepper
Optional: Chili oil cilantro avocado cucumber chili flakes
1/4 cup water
2 T powdered wasabi
1 T toasted sesame oil
2 t kosher salt
12 sheets sushi nori
For the Poke

Place wakame and hijiki in separate small bowls. Cover with boiling water and let rest until rehydrated and tender, about 5 minutes. Drain and squeeze excess liquid. Roughly chop wakame.

In a large bowl combine all the ingredients except tuna. Mix well and fold in tuna and optional ingredients. (If adding avocado, make sure to leave it out and fold in until the very end) Mix gently to not break tuna, add a touch of salt and pepper if needed. Adjust any other seasonings you’d like to your taste.

Let sit 5 minutes at room temperature before serving.
For the Nori Crisps

Heat oven to 250°F.

Combine the water, wasabi, sesame oil and salt in a small bowl and whisk with a fork until combined. The wasabi tends to settle to the bottom, so you may need to re-whisk between batches.

Take one sheet of nori and fold it in half. Unfold it and lightly paint half the sheet with the wasabi water using a pastry brush and fold it back again, pressing the sheet with the palm of your hand. Lightly brush the top with wasabi/water mix, as well. Using a sharp knife or scissors, cut the nori into whatever size you’d like and lay them on parchment-lined sheet pan.

Repeat this process with remaining nori. Strips can be close to each other, but should be in a single layer. Bake for about 12-15 minutes, until darkened, dry to the touch, and brittle. Transfer the nori crisps to a cooling rack.
To Serve

There are many ways to serve this. Choose any way you like!

A) Put poke in bowl and serve crisps on the side. Guests can grab a crisp, spoon a bit of poke on it and eat like a taco.

B) Put poke in small appetizer cups, serve with small spoon and garnish with the crisp on top.

C) Lay nori crisps on a tray and top each with some poke, just make sure it’s served and consumed immediately as the poke will make the nori soggy quickly.
