Frijoles Rancheros

ingredients
all
12 oz Bacon
diced
1 White onion
chopped
2 finely Serrano chiles
3 cloves Garlic
minced
3 Roma tomatoes
chopped
8 cups Cooked beans
1lb dried beans
6 cups Chicken stock
2 Bay leaves
1/2 tsp Smoked paprika
1/2 tsp Cumin
1/2 tsp Dried oregano
1/4 tsp Pepper
Salt
to taste
1 bunch Cilantro
save some for garnish
For the Beans

Cook bacon in a large pot over medium-high heat, stirring constantly, until fat is rendered, and bacon is just starting to brown around the edges, about 5 minutes. Add onion and chilies and cook, stirring, until softened and just starting to brown, about 4 minutes.

Add garlic and cook until fragrant, about 30 seconds. Add tomatoes.

Add the cooked beans, chicken stock, bay leaves, smoked paprika, cumin, dried oregano, salt and pepper. Bring to a simmer

Continue cooking until the liquid has thickened, remove bay leaves and stir in cilantro.
