For the Beans | |
1 | Cook bacon in a large pot over medium-high heat, stirring constantly, until fat is rendered, and bacon is just starting to brown around the edges, about 5 minutes. Add onion and chilies and cook, stirring, until softened and just starting to brown, about 4 minutes. |
2 | Add garlic and cook until fragrant, about 30 seconds. Add tomatoes. |
3 | Add the cooked beans, chicken stock, bay leaves, smoked paprika, cumin, dried oregano, salt and pepper. Bring to a simmer |
4 | Continue cooking until the liquid has thickened, remove bay leaves and stir in cilantro. |
