Dry Fried Spicy Green Beans

3 lb green beans or Chinese long beans
Kosher salt
2 tbsp neutral oil
5 cloves garlic
smashed and coarsely diced
2 tbsp sambal (garlic and chili paste)
sriracha works too!
1/4 cup Chinese Shaoxing wine (sherry works)
1/4 cup soy sauce
2 tbsp sugar
2 tsp toasted sesame oil
For the Beans

Heat your wok over high heat until just starting to smoke, and add the green beans and salt. Immediately lower the heat to medium low, and sear the green beans for about 10 minutes, stirring occasionally. You want to see small scorch marks on the green beans.

During this process, gather the rest of the ingredients and have them ready.

Once the beans are somewhat tender, take them out of the wok and set aside. The residual heat will continue to cook the green beans.

Heat the oil in your wok over medium high heat and bloom your aromatics, adding garlic and sambal and stir for 15 seconds. Deglaze with the wine, add soy sauce and sugar. Cook for another minute.

Toss in the seared green beans, crank the heat to high to stir fry for a final minute. Add the sesame oil last, give it one quick toss to mix it and serve asap cuz nobody likes cold green beans, capisce?
