ingredients
all
1/4 cup rice bran oil
6 cloves garlic
sliced
2 T Ras El Hanout
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp cayenne
1/4 cup fresh mint
chopped
2 tsp Kosher salt
1 tsp ground black pepper
2 each lemon zest
1 each lemon juice
3 lbs lamb sirloin
trimmed and sliced into ¼ inch thick strips or chunks
2 cups picholine olives
1 clove garlic
smashed
2 inches lemon peel
2 sprigs fresh thyme
3 tbs extra virgin olive oil
1 dash soy sauce *optional
For the Lamb

Soak skewers in water for 30 minutes. Puree all the “spice rub” ingredients to create a paste.

Rub evenly onto lamb and marinate for at least 30 minutes.

Preheat grill over high heat and wipe it with a lightly oiled cloth to prevent sticking. Skewer the marinated lamb and grill to desired doneness.
For the Olives

Mix all ingredients together and warm in a skillet.
To Serve

Put warm olives in a bowl and serve alongside the lamb skewers. Yumo!
