1 lb beef
thinly sliced and pounded paper thin
1 bunch scallions
grilled
12 string beans or asparagus
1/2 cup soy sauce
2 tbls mirin
1 tbls sake (optional)
1 pinch sugar
1 tbls vegetable oil

Spread beef in one layer and season with salt and pepper. Cut grilled scallions into 2-3 inch pieces or the same length as the width of the beef.

Clean beans and blanch. Cut beans into 2-3 inch pieces or the same length as the width of the beef.

Mix soy sauce, mirin, sugar, and sake in a small bowl.

Lay beef on work station and place vegetables on the beef roll. Close with toothpicks. In a medium sauté pan, heat oil and sear the beef rolls.

Add half of the soy sauce mixture and cook for 1 minute. Finish sautéing with remaining soy sauce mixture. For thicker sauce, mix 1 teaspoon cornstarch into soy sauce mixture before adding to the sauté pan.
