6 each Chioggia beats
peeled and shaved thin
1 whole tangerine
supremed and juice reserved
4 whole scallions
thinly sliced
1/4 cup golden balsamic vinegar
1 whole shallot
finely minced
2 Tbsp extra-virgin olive oil
2 Tbsp chopped parsley
Toss the shaved beets with the tangerine juice. Mix with the remaining ingredients. Season with salt and pepper to taste. Serve in a wok spoon and garnish with parsley.
