Ingredients
 romaine lettuce1 head
washed and dried in salad spinner and chopped into bite-size pieces
 tomatoes2 medium
cored
 English cucumber1 medium
large dice
 kalamata olives1 cup
pitted and halved
 medium red onion 1/2 each
thinly sliced
 extra-virgin olive oil3 tbsp
 lemon 1/2 each
zested
 freshly squeezed lemon juice2 tbsp
use more as needed
  fresh oregano leaves1 1/2 tsp
finely chopped or 1/2 teaspoon dried oregano
 Salt and pepper
 crumbled feta cheese 1/2 cup
about 2 1/2 ounces
For the Salad

Place the lettuce in a large bowl and add the tomatoes, cucumber, olives, and onion; set aside.
For the Dressing

Place the oil, zest, lemon juice, oregano, salt and pepper to taste in a small, bowl and whisk to combine. Pour over the salad and toss to combine. Taste and season with additional lemon juice, salt, or pepper as needed.
To Serve

Sprinkle with the feta and serve.
