English cucumbers3 each
halved and sliced ¼ inch thick on mandoline
 small red onion1 each
sliced very thinly on mandoline
 sugar2 tbsp
 rice vinegar 1/2 cup
  mint 1/2 bunch
picked and chopped finely
 Salt and pepper


In a large bowl, combine cucumbers, red onion, sugar, mint, and rice vinegar. Season with salt and pepper and toss to combine.
