Ingredients
 lamb sirloin or chicken3
trimmed and sliced into 1/4 inch thick strips
 rice bran oil 1/4 cup
 garlic6 cloves
sliced
 smoked paprika1 tsp
 ground cumin1 tsp
 chopped fresh mint 1/4 cup
 Kosher salt2 tsp
 ground black pepper1 tsp
 zest of 2 lemons
 juice of 1 lemon
 Ras El Hanout2 Tbsp
 cayenne 1/2 tsp
 English cucumber 1/2 each
 finely chopped fresh herbs (mint cilantro oregano and/or parsley) 1/2 cup
 zest and juice of 1 lemon
 Kosher salt and ground black pepper

For the Lamb

Soak skewers in water for 30 minutes. Puree the remaining ingredients (except the lamb) to create a paste. Rub evenly into lamb and marinate for at least 30 minutes. Preheat grill over high heat and wipe it with a lightly oiled cloth to prevent sticking. Skewer the marinated lamb and grill to desired doneness.
For the Tzatziki

Mix all ingredients together. Adjust seasoning to taste.
