3 lamb sirloin or chicken
trimmed and sliced into 1/4 inch thick strips
1/4 cup rice bran oil
6 cloves garlic
1 tsp smoked paprika
1 tsp ground cumin
1/4 cup chopped fresh mint
2 tsp Kosher salt
1 tsp ground black pepper
zest of 2 lemons
juice of 1 lemon
2 Tbsp Ras El Hanout
1/2 tsp cayenne
1/2 each English cucumber
1/2 cup finely chopped fresh herbs (mint cilantro oregano and/or parsley)
zest and juice of 1 lemon
Kosher salt and ground black pepper
1 cup yogurt
For the Lamb
Soak skewers in water for 30 minutes. Puree the remaining ingredients (except the lamb) to create a paste. Rub evenly into lamb and marinate for at least 30 minutes. Preheat grill over high heat and wipe it with a lightly oiled cloth to prevent sticking. Skewer the marinated lamb and grill to desired doneness.
For the Tzatziki
Mix all ingredients together. Adjust seasoning to taste.
