2 lbs ground pork
6 cloves garlic
minced
2 whole jalapeño chiles
seeded and minced
2 tbsp fish sauce
2 tbsp soy sauce
1 tbsp ginger
minced
1 tsp five spice powder
3 tbsp sugar
2 whole limes
used for juice and zest
1 bunch cilantro
minced
2 tsp Kosher salt
1 tbsp Sriracha sauce
1 tbsp vegetable oil
cucumbers
sliced 0.25 inch thick
cilantro sprigs
mint sprigs
carrots
sliced .125 inch thick
sliced jalapenos
1 cup mayonnaise
2 whole limes
juiced
2 tsp sugar
Kosher salt to taste
Sriracha to taste

For the Meatballs

Combine the ground pork with all of the ingredients.

Heat a sauté pan with vegetable oil, and sauté a small patty of the pork mixture. Taste for seasoning. It should be slightly spicy, slightly salty, barely sweet, and well-seasoned. Adjust if necessary.

Heat a grill pan and form the pork into flat, meatball-size patties. Grill, turning once, until cooked through and charred.

Place each meatball patty on a slice of cucumber. Tuck in a sprig of cilantro, mint, and carrot slice. Top with a jalapeño slice.
For the Sauce

Combine all of the sauce ingredients, adding the salt and Sriracha to taste. Top each meatball with a little sauce.
