For the Meatballs | |
1 | Combine the ground pork with all of the ingredients. |
2 | Heat a sauté pan with vegetable oil, and sauté a small patty of the pork mixture. Taste for seasoning. It should be slightly spicy, slightly salty, barely sweet, and well-seasoned. Adjust if necessary. |
3 | Heat a grill pan and form the pork into flat, meatball-size patties. Grill, turning once, until cooked through and charred. |
4 | Place each meatball patty on a slice of cucumber. Tuck in a sprig of cilantro, mint, and carrot slice. Top with a jalapeño slice. |
For the Sauce | |
5 | Combine all of the sauce ingredients, adding the salt and Sriracha to taste. Top each meatball with a little sauce. |
